Now owned by Bollinger, Ayala’s Champagnes have seen great improvement in recent years. This nonvintage Brut is complex, with its dry character given weight by a hint of toast, almonds and a taut aftertaste. (12/2011)

(made from 45% pinot noir, 35% chardonnay and 20% pinot meunier; disgorged February, 2012): Bright yellow-gold. A perfumed, mineral-accented bouquet evokes lemon, jasmine and chalk. Racy and dry, with strong citrus zest and pear flavors and a hint of bitter quinine on the back end. The long, incisive finish shows very good energy and an appealing seamless character. Nicely balanced Champagne that would work well with either rich or delicate foods. (12/2012)

The NV Brut Majeur shows lovely balance in an approachable, up-front style well-suited to near-term drinking. Clean, mineral notes add a sense of proportion on the fresh, vibrant finish. The blend is 45% Pinot Noir, 35% Chardonnay and 20% Pinot Meunier, 80% of which is from the 2004 vintage, while the rest of the wine is composed of Pinot Noir and Chardonnay reserve wines.
