have been a huge fan of Cascabel’s wines for some 12 years now. A small, hands
on independent family run winery with some of the finest vineyards on the
slopes of the Sellicks Hill Range at the Southern end of the of the hugely
sought after McLaren Vale appellation of Australia, home to some of the
country’s greatest wines. Production is small and hands on and all is done to
make the absolute finest quality at reasonable prices. Duncan Ferguson
and Susana Fernandez are both very qualified winemakers and have extensive
winemaking experience in Australia, Spain, France, Italy, Germany and New
Zealand. This not only gives them a thorough grounding in many different styles
but also an interest in producing wines in Australia with a complexity and

from 70% mourvedre, 10% grenache, 10% shiraz,
5% carignan and 5% cinsault): Bright red. Spicy aromas of fresh cherry and
rhubarb, with a suave floral quality and a hint of cracked pepper. Taut and
lively on entry, then deeper in the middle, offering juicy, sharply delineated
dark fruit flavors and a touch of anise. The lively finish shows very good cut,
clarity and smooth, floral-dominated persistence. 91pts Tanzer
This
wine is a classic blend of traditional varieties grown in McLaren Vale for more
than a century. Our previous experiences in France and Spain encouraged us to
plant these varieties with the intention of making a wine that captures all
those traditions while giving it a modern edge.
Winemaker
notes:
The grapes are from our vineyard and were all handpicked. Monastrell (known in
Australia as Mataro and Mourvèdre in France ) at 14º Bè and Grenache at 13.6º Bè
in late April 2011. Shiraz was harvested in March at 13.5º Bè, while Carignan
(known in Spain as Mazuelo or Cariñena) at 13.5º Bè and Cinsault at 12.2º Bè in
mid-March. All varieties were fermented separately in 1.5 tonne stainless steel
open fermenters, with some whole bunches and regular hand plunging. Ferments
were allowed to reach reasonably high temperatures, up to 32º C. Maceration
occurred, on skins, for 3 weeks after fermentation, in order to gain better
palate structure, even if this may sacrifice, some fruitiness and color. The
wines were pressed straight into a tank and then transferred to barrel where
malolactic fermentation occurred spontaneously. After 15 months the wines were
removed from barrel, blended and allowed to settle in tank naturally. The final
blend was bottled in November 2012 using gravity filling to screw cap closures,
labeled and packaged by us, using all our own equipment. By our participation
in every phase of the process, from grape to final bottle, we maintain full
control over the individuality and quality of every bottle of wine.
Our vineyard is only 3 km from the sea, at the Southern end of McLaren Vale, in
South Australia. Strong winds from the hills behind us appear almost every
afternoon during Spring and Summer; they minimize diseases and cool us at
night. The vineyard is dry grown, with a very well drained stony loam soil. The
reddish gravely clay has plenty of medium size stones all through it. The
trellis system is low (with the traditional single wire) and the vines are spur
pruned (by hand), to allow good airflow thus reducing the need for spraying
(only powder sulphur is needed, sporadically, for the prevention of Powdery
Mildew). The vineyard is well established and in balance, cropping between 1 to
2.5 tonnes per acre.
