Tasting Notes: A parcel of young vines on a very steep slopes facing south/south-west, located on the right bank of the river Serein at Fonenay, near Chablis in a valley called "Grand Bois". The vineyard is 0.55 hectare of Chablis AC in the "Vallée du Grand Bois" in Fontenay-près-Chablis. This 10 year old vineyard is planted on very steep chalky soils with a perfect SW exposure. Yields are kept below 60 hl/ha and the wine is made in a stainless steel and aged on its fine lees for 12 months. Only about 350 cases of Chablis "Le Grand Bois" are produced per vintage.
