TASTING NOTES: Fruit from sustainably farmed blocks in Rutherford and Napa. Each vineyard block was harvested and made into an individual lot representing that block. The wines were pressed off the skins from 10 to 28 days after crushing. Blending generally takes place between January and April of the year following harvest. Aged for 18 months in American oak barrels (1/3 new barrels) 95% Cabernet Sauvignon, 0.5% Petit Verdot, 4.5% Cabernet Franc. Complex black cherry, berry, and rich plum fruit characters, interwoven with anise, clove and black pepper. Full-bodied, rich and graceful, with a complete mid-palate and a lengthy finish. A notable structure complemented by toasty oak and cocoa powder tannins. Showy now but with definite potential for the next five to seven years.

So when a seasoned winemaker like Honig's Kristin Belair is handed such awesome fruit to display her 28 years honing her skill in producing richly textured, subtle Cab with great depth and style, the wine is sure to be a treasure. And from right in our own backyard 2007 Honig Cabernet Sauvignon Napa Valley. This wine is a tapestry of complex red and black fruit characters with anise, clove and black pepper notes. Rich and graceful, with a full mid-palate and a lengthy finish, complemented by toasty oak and cocoa powder tannins. Family-owned, sustainably farmed, the Rutherford winery started as a 68-acre ranch in 1964 and only makes Cabernet Sauvignon on the red side. The hand-crafted Cab has signature Rutherford dust notes, an elegance and tremendous fruit that 92 points from Wine Spectator surely picked up on, coming as it does from the same side of the AVA as Caymus and Opus One. A top ten restaurant favorite in Wine & Spirits 2010 survey, this wine is also one of the great buys of this amazing vintage. Literally less than a handful of '07 Napa Cabs kept company with on its release with 92 points and a price of $40.While in stock, at this price, load up on this great wine from Napa's great ( greatest?, could be) vintage.
