Tasting Notes: The 2008 Baltos made from 100% Mencia and aged for 6 months in seasoned French and American barriques. It offers up an earthy minerality along with aromas of cherry cola and spicy black fruits. Dense, rich, and layered on the palate, this juicy, pleasure-bent effort has enough stuffing to evolve for 1-2 years but can be approached now. It is an outstanding value.

The vineyards are scattered throughout the Bierzo region in northwestern Spain near Cabanelas, Valtuille, and Almazcara at elevations of 500 meters above sea level. While the soil does vary slightly from one vineyard location to another, it is mostly clayey and calcareous. Being bush vines with an average age of 45 years, the gobelet training method is employed with a planting density of 3000 vines/hectare. Although not certified organic, Dominio de Tares does all it can to respect the environment in its viticultural practices. Enjoy with grilled meats and seasoned chicken dishes, as well as tomato-based pasta dishes.
