It's believed that monks first planted vines in California during the late 1700s. Over the last few decades, the state has emerged from a minor player in wine production to a full-fledged leader in several categories. Merlot is one of these categories. Though by no means the primary grape developed in California, merlot grapes
are used to create some of the most delicious offerings available. Yet this heavenly grape has more diversity and is often the final blending component to an otherwise unappealing cabernet. The flavor of merlot is more supple and less complex than a cabernet, with softer undertones and noticeable alcohol flavors. Fewer tannins means merlot can be enjoyed earlier, but it doesn't age as well
as other varieties. A good merlot is an excellent table wine and is often paired
with magnificent gourmet meals. Some feel the best California merlots come from the Central Valley. Duckhorn Vineyards, established in the 1970s, produces a very well-known and adored merlot. Napa's Blackstone and Concannon vineyards have also created stunning merlots.
