All red grapes are not created equal. Cabernet franc, a close cousin to the more famous cabernet sauvignon, has many distinguishing characteristics. Possessing a softer finish and fewer tannins, cabernet franc wines maintain a more peppery nose and often highlight a far more herbaceous undertone. This wine is not quite as full-bodied as a regular cabernet and has slightly
less acidic qualities as well. It ripens earlier than the thick-skinner sauvignon, and the French often add it to a less-than-impressive crop from similar grape productions in order to save the vintage. Blends of this grape usually involve merlot
and the obvious choice of cabernet sauvignon, but it's usually not the dominant
grape. Chateau Cheval Blanc remains the most famous producer of this notable wine, but a few California wineries are now offering franc wines as well. Colder climates the world over also appreciate this more robust variety,
including parts of Hungary, Ontario's Niagara Peninsula, and British Columbia.
