I just had lunch with Geoffrey Loisel at L’escale Restaurant in Greenwich today. Geoffrey is the general manager of the hardest to get, everyone wants, greatest Champagne there is, Billecart Salmon. Billecart is the premium luxury champagne in the world today. Billecart epitomizes style, grace and elegance associated with the finest brands in the world. It is the oldest family run Champagne house dating back to 1818 and now managed by the seventh generation, brothers Francois and Antoine. Billecarts distinctive style is all about the freshness of the fruit, protecting the delicate aromas while highlighting the layered complexity, rich textures and linear precision.

Billecart-Salmon is one of those names in Champagne that resounds with the history of the world’s favorite wine to mark celebrations, special occasions and, as we love to do, a way to bring delight and enjoyment when the “glamorous fizz”, as our favorite wine writer Jancis Robinson calls it, is introduced at a gathering or meal. A defining characteristic of Billecart-Salmon is their practice of double cold settling which they began in 1952.
